About potlucks and potato salads

According to Wikipedia, potluck is also known as Jacob's join, faith supper and in swedish Smorgasbord.  A plethora of words to describe coming together to eat.  How wonderful when folks share a hotchpotch of dishes; good food and good fellowship.



Like potluck, this version of potato salad is a little bit of everything.  It's sweet, it's savory, it's a snack, it's a meal.  It's also a hot favorite when I bring it to a potluck.  This is a humble recipe that I learned from an aunty and have since adapted it.  At home, we eat this every Thursdays for some reason I'm not sure of.  My kids love it!  It has almonds, raisins, egg, pineapple ... and it goes great with pork chops (that recipe coming up in the next few weeks, so watch out for that) ... is once again very easy to put together.  If you're looking for something to prepare for a Christmas party or an office party, try making this!

Ingredients

  • 5 large potatoes
  • 20 whole almonds
  • 3 hard boiled eggs
  • 1 cup of raisins
  • 1 cup of diced pineapple
  • chopped 1 sprig of spring onion
  • 2-3 tablespoon of Mayonnaise
Method
  1. Boil potatoes.
  2. Mash potatoes into bite size as shown above.
  3. Mash separately hard boiled eggs into bite size.
  4. Add all the ingredients together and mix well.
I like it served cold, so after mixing all the ingredients, I will leave it in the fridge for about an hour.
